Our kitchen
One grill, one cook, 120 patties a day
Adib grinds chuck and short rib every morning at seven and presses nothing until it is ordered. When the day's 120 patties are gone the menu closes — that is why nothing here tastes like it has been waiting.
Buns are baked two streets away and delivered twice a day. Nothing is frozen, nothing is held over, and the charcoal is lit before we open.
